Long before the doors open, the day begins with dough in motion, mixed and shaped by hand, using traditional methods with no additives or preservatives. At Schmaltz's Sandwich Shoppe in Waco, that early start defines everything that follows, from oven-toasted sandwiches to crisp salads and warm bowls of soup. The menu keeps things familiar yet thoughtful, with options like turkey sandwiches, pastrami, and a classic BLT, alongside vegetarian and low-fat choices. Whether stopping in, grabbing takeout, or planning ahead, there’s always something ready to fit your day in both of our locations.

Schmaltz's Sandwich Shoppe was opened in 1975 on the Baylor Campus in Waco, Texas. It soon became popular with the students, and the next year another location opened in Downtown Waco, followed by the third location in Waco on Valley Mills Drive the next year. The Baylor location was closed in 1982.

The secret to the longevity of Schmaltz's is the bread. It is a simple artisan bread made by hand every day. The sandwiches are oven-toasted, giving the bread a crunchy crust covering a soft and airy center. In 1991, a whole-wheat variety was added. Other menu items were added over the years.

Soups and salads are popular choices along with a variety of sandwich toppings. There is even a selection of low-fat sandwiches. Found only in Waco, Texas, Schmaltz's is ''Waco Born & Bread''.
